Before I give you the recipe, which includes brown sugar, I have to tell you my brown sugar story from tonight. I went to the cabinet to get my brown sugar and whoever used it last didn't close the plastic and it was hard as a rock. I jumped on my trusty message board and asked for help how to soften it in a short amount of time. I got a lot of similar answers "throw it in the microwave with a cup of water" or "throw it in the micorwave with an apple on it" or put it in a bag with bread and it will soften by morning. I couldn't do the bread but I did try the other 2. They don't work. So I was bummed. I really wanted to make this recipe tonight. I had been dreaming of it all day.
So with a little clever thinking I grabbed my cheese grater (see below) and a glass bowl and started grating my sugar. It worked like a dream and believe it or not it still packed nicely!

So without further babbling here is the recipe. I served it with Garlic mashed potatos...so yoummy! See MY note on the bottom for a minor improvement on it. :)
Sweet Chicken Bacon Wraps Recipe

1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 (1-pound) package sliced bacon
2/3 cup firmly packed brown sugar
2 tablespoons chili powder
Preheat oven to 350 degrees F.
Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

***michelle's note: While I did follow the cooking directions to a "T" I discovered afterwards that there was this nice little pool of "juices" and sugar on the bottom, the rest was baked to the pan. I dipped a piece of the chicken in it and it was heaven. Pure, full of bad things for you, heaven! So instead of letting it drip down I am going to cook it in a casserole dish next time and sprinkle the remainder of the "batter" over it so we get all that sticky goodness.
***I also made my chicken pieces a little bigger and used 1/2 pieces of bacon instead of a 1/3 as we were having it as a meal and not an appetizer.
